The questions in this video are the same ones NCOMA was founded to answer. There is no federal standard for frying oil quality in the US. No required testing. No discard rules. The oil your food is cooked in is entirely up to the operator — and most operators have never been given a standard to follow.
That's what we're building. A voluntary, science-based certification so operators can prove their oil is managed right — and so you, the consumer, can finally get an answer when you ask.
